The Folsom Kitchen is well suited for bakers and caterers utilizing only ovens cold prep. We have have an 8ft exhaust hood with 2 Lang Accu-Plus Electric Full Size Convection Ovens, 1 Blodgett Steam Convection Combination Oven and 1 Blodgett High power convection oven . There is no cooking, open flames or grease as we have a type 1 heat and condensation hood system. The kitchen is equipped with a couple induction burners for sauces, reductions, frostings, fillings, etc.
The large spacious baking kitchen is accessible 24/7 by digital locks. You will be assigned a digital key once your time slot is approved. The door is accessible electronically only during your allocated time period. The entire space is broken up into 5 stations consisting of 3 Baking Stations and 2 Cold Prep Areas. We offer equipment storage, dry storage and cold storage at this facility.
All stations include: an allocation of towels & cleaning supplies accessed electronically, use of the reach in cooler for the time booked, use of the large 3 compartment sink, access to restrooms, daily lockers and free wi-fi. Locked dry and cold storage is available for rent. Use of the under hood cooking equipment is included in the 3 baking spaces bookable by the hour. Small prep equipment is also reservable when booking your time slots...Robot Coupe, 20Qt Mixer, 30qt Mixer, Kitchenaid Mixers, countertop convection oven, blenders, slicer, immersion blender, food processor and dough sheeters, etc.
Baking Station 1 is Located closest to the Freezer. Can be combined with Baking Station 2 for large scale food production. Accomodates up to 4 kitchen staff. Prices starting at $30/hour. Discounts available.

2 Stations available. Great for basic commissary requirements, cheese & charcuterie prep, cold catering prep, juices etc. Accomodates up to 2 people. No Access to Hot cooking Equipment. Prices start at $20/hr. Discounts available.
Monthly Station Ghost Kitchen Rentals
Folsom Cold Prep Area 1 - $2500
a. The Cold Prep area at Folsom can be rearranged for your use and rented monthly. It currently rents for $20/hour or $16/hr for higher quantity hour plans.
b. At full time 40 hours per week, that would equal on average about 173 hours per month for a Total of $2768. No commitments. Paid prior to use every month on the 5th of each month via Food corridor software and ACH or credit card on file. 2% fee for ACH and 4% fee for Credit Card.
c. $250 security deposit required.
d. Allowed to bring in own equipment, appliances and coolers.

b. At full time 40 hours per week, that would equal on average about 173 hours per month for Total of $4325. No commitments. Paid prior to use every month on the 5th of each month via Food corridor software and ACH or credit card on file. 2% fee for ACH and 4% fee for Credit Card.
c. $250 security deposit required.
d. Allowed to bring in own equipment, appliances and coolers.
e. Own Entry Door for deliveries and pickup
